20241229: dried clams, shortbread cookies
- Clams: took a can of clams, added red pepper flakes and oregano. Oven at 180degF for 1.5hr. Sprinkled on top up baked potatoes. The clams added a texture & flavor that made the potatoes more appetizing.
- Coconut Flour Shortbread Cookies: used palm sugar instead of erythritol. I don't have a stand mixer, so I used my hands and a spatula. This made 15 cookies. I put apricot jam on top of some of the cookies.
20241222: jerky, coconut
- Jerky: 1lb pork sirloin, cut into small strips. ~3tbsp oyster sauce, .5tbsp lime juice, two pinches of salt, 1/8 of a round of palm sugar. In oven at 180degF.
- Removed coconut from a can of canned coconut meat. I was straining thai tea, and rubbed some of the tea + powder over the coconut. In oven at 180degF.
- Idea: try using the syrup (from the canned coconut) to make a candy. Reuse thai tea powder in it?
